The Preservatives in Your Grocery Cart May Be Raising Your Blood Pressure

But a major new study suggests there may be another ingredient quietly affecting your cardiovascular health, one that most of us have never thought to look for.

That ingredient is not a nutrient. It’s a preservative.

What the Study Found

A large prospective study published in May 2026 in the European Heart Journal tracked over 112,000 adults in France for nearly eight years, analyzing their dietary records in detail, including the specific commercial food products they consumed and the preservative additives those products contained.

The findings were striking. Higher consumption of non-antioxidant preservatives was associated with a 29% higher incidence of hypertension and a 16% higher incidence of cardiovascular disease compared to lower consumers.

A note on antioxidant vs. non-antioxidant preservatives: Non-antioxidant preservatives inhibit the growth of bacteria, mould, and yeast to extend shelf life. This includes nitrites, nitrates, sorbates, and propionates, the compounds most strongly linked to hypertension in the study. Antioxidant preservatives, like vitamin C and sulphites, work by preventing fats from going rancid and are generally considered more benign. The fact that even this second category was associated with a 22% higher hypertension risk was one of the study’s more unexpected findings.

Of the 17 individual preservatives consumed by at least 10% of the study population, eight were associated with higher rates of hypertension. Specific additives flagged in the findings include nitrites (found commonly in cured and processed meats), sorbates, propionates, and citrates, compounds found across a wide range of packaged and processed foods.

This is the first study to comprehensively track cumulative, time-dependent exposure to this many preservative food additives and link them to heart outcomes. The authors conclude the data call for a re-evaluation of regulations governing the use of these additives to improve consumer protection.

Why This Matters for Canadians

Hypertension is not a minor health concern in Canada. It is one of the most widespread chronic conditions in the country.

According to the Public Health Agency of Canada, about 25% of Canadian adults aged 20 and older are living with diagnosed hypertension. The Heart and Stroke Foundation reports that the number of Canadian adults living with high blood pressure has increased every year since 2000, and that nine in ten Canadians have at least one modifiable risk factor for heart disease and stroke.

More recently, data from the Canadian Health Measures Survey show that hypertension prevalence increased significantly between 2018 and 2024, jumping from 22% to 27.7% of adults, with the sharpest relative increase seen in Canadians aged 20 to 39. The annual cost associated with high blood pressure in Canada is estimated at $13.9 billion.

Preservatives are not the only factor driving these numbers. But in a country where hypertension is already rising, and where ultra-processed foods make up a significant portion of many Canadians’ diets, this research adds a meaningful new variable to the conversation.

What Are These Preservatives and Where Are They Found?

Preservative food additives are substances added to packaged products to prolong shelf life, protecting against microbial growth, oxidation, and spoilage. According to the study, more than 20% of industrial foods and drinks in the Open Food Facts database contained at least one of these additives in 2024.

These are legal, widely used additives that have been evaluated by food safety authorities in Canada and internationally. Health Canada’s List of Permitted Preservatives includes many of these same compounds. The European Heart Journal study does not suggest these additives are immediately unsafe, but argues that the current regulatory framework is based on toxicological endpoints that have not historically included cardiovascular outcomes, and that this new long-term prospective data warrants a fresh look.

Important Caveats

This is observational research, conducted in France, and the authors themselves call for further experimental research to understand the underlying mechanisms. Association does not equal causation. People who consume more preservatives may also have dietary patterns that differ in other ways.

That said, the study is notably rigorous: it followed over 112,000 participants for nearly eight years, used repeated and detailed dietary records (up to 96 per participant), accounted for naturally occurring dietary sources of the same compounds, and controlled for a wide range of confounding variables. These are not the conditions under which associations are easily dismissed.
